Cheese and Herb Tart

Dairy and fresh herbs were valued in ancient diets; this simple tart combines both in a rustic form.

Ingredients:

  • 1 cup coarse whole wheat flour or spelt flour

  • 1/2 cup butter or animal fat, chilled and diced

  • 1/4 cup cold water

  • 1 cup soft cheese (fresh goat cheese or ricotta)

  • Mixed fresh herbs (parsley, chives, dill)

  • Salt and pepper

Instructions:

  1. Make pastry by mixing flour and fat, then adding cold water to form dough. Chill 30 minutes.

  2. Roll dough into a circle and place in a tart pan or on a baking sheet.

  3. Mix cheese with chopped herbs, salt, and pepper. Spread over pastry.

  4. Bake at 375°F (190°C) for 25–30 minutes until crust is golden and cheese slightly browned.
