Cinnamon-Spiced Roasted Apricots or Peaches

Ingredients:

  • 4 ripe apricots or peaches, halved and pitted

  • 2 tbsp maple syrup

  • 1/2 tsp ground cinnamon

  • 1/4 cup crushed nuts (almonds, walnuts, or hazelnuts)

  • Optional: coconut cream or vegan whipped cream for serving

Instructions:

  1. Preheat your oven to 375°F (190°C) or prepare a grill.

  2. Arrange the halved apricots or peaches cut-side up in a baking dish or on a grill tray.

  3. Drizzle each half generously with maple syrup.

  4. Sprinkle evenly with ground cinnamon.

  5. Roast in the oven for 20–25 minutes or grill for about 10–15 minutes, until the fruit is tender and caramelized, with slight browning on the edges.

  6. Remove from heat and sprinkle with crushed nuts for crunch.
