Barley and Berry Porridge

Barley was widely consumed in ancient Europe, and wild berries celebrate the summer harvest.

Ingredients:

  • 1 cup pearl barley

  • 3 cups water or milk (dairy or plant-based)

  • 1 cup fresh wild berries (blackberries, raspberries, or blueberries)

  • 1 tbsp honey or maple syrup

  • A pinch of cinnamon or nutmeg (optional)

Instructions:

  1. Rinse barley well. In a pot, bring water or milk to a boil, add barley, then reduce heat and simmer for 45 minutes until tender.

  2. Stir in berries and sweetener. Cook another 5 minutes until berries release juices.

  3. Sprinkle with cinnamon or nutmeg if using. Serve warm or chilled.
