Barley and Berry Porridge
Barley was widely consumed in ancient Europe, and wild berries celebrate the summer harvest.
Ingredients:
1 cup pearl barley
3 cups water or milk (dairy or plant-based)
1 cup fresh wild berries (blackberries, raspberries, or blueberries)
1 tbsp honey or maple syrup
A pinch of cinnamon or nutmeg (optional)
Instructions:
Rinse barley well. In a pot, bring water or milk to a boil, add barley, then reduce heat and simmer for 45 minutes until tender.
Stir in berries and sweetener. Cook another 5 minutes until berries release juices.
Sprinkle with cinnamon or nutmeg if using. Serve warm or chilled.
