Honey and Herb Flatbread

Flatbreads were a staple in ancient times and easy to make with basic grains. This version honors Litha with the sweetness of honey and the fragrance of summer herbs.

Ingredients:

  • 2 cups whole wheat flour or barley flour

  • 1/2 tsp salt

  • 3/4 cup water (approximate)

  • 2 tbsp olive oil or melted butter

  • 2 tbsp wild honey

  • Fresh herbs (thyme, rosemary, or mint) finely chopped

Instructions:

  1. Mix the flour and salt in a bowl. Slowly add water and olive oil, kneading into a soft dough.

  2. Let it rest for 15–20 minutes.

  3. Roll out dough into thin rounds. Sprinkle chopped herbs on top, then drizzle with honey.

  4. Cook on a hot griddle or skillet over medium heat until golden brown on both sides (about 2-3 minutes per side).

  5. Serve warm, perhaps alongside fresh cheese or berries.
