Sourdough Brown Bread Recipe

Ingredients 

  • 11/2 cups flour

  • 1 cup rye flour

  • 1 cup water

  • 1/2 cup fed sourdough starter

  • 1 tablespoon honey

  • 1 tablespoon molasses

  • 1 tablespoon cacao

  • 1 teaspoon salt

  • 1 teaspoon baking powder

  • coconut oil

Instructions 

  • The night before you want sourdough brown bread, stir in a glass bowl: flour, water, fed sourdough starter.

  • Cover it with a towel and let it sit at room temperature for 12- 24 hours. You can get away with a longer in the cooler months and the fermentation process can take less time in the summer if your house is hot.

  • After it has fermented, add to the mixture honey, molasses, cacao, salt and baking powder.

  • Mix the ingredients together until they are fully incorporated. You will probably have to use your hands for this. The dough will be pretty thick. NOTE: If the dough feels runny, add a bit more flour. It should be workable, yet not stiff.

  • Preheat oven to 350°F (175°C).

Shape loaf:
Gently deflate dough, shape into a loaf, and place in a greased 8×4-inch or 9×5-inch loaf pan.

Bake:
Bake 35–40 minutes, until crust is firm and a skewer inserted comes out clean.

Cool:
Remove from pan and cool on a wire rack before slicing.
