Sourdough Brown Bread Recipe
Ingredients
11/2 cups flour
1 cup rye flour
1 cup water
1/2 cup fed sourdough starter
1 tablespoon honey
1 tablespoon molasses
1 tablespoon cacao
1 teaspoon salt
1 teaspoon baking powder
coconut oil
Instructions
The night before you want sourdough brown bread, stir in a glass bowl: flour, water, fed sourdough starter.
Cover it with a towel and let it sit at room temperature for 12- 24 hours. You can get away with a longer in the cooler months and the fermentation process can take less time in the summer if your house is hot.
After it has fermented, add to the mixture honey, molasses, cacao, salt and baking powder.
Mix the ingredients together until they are fully incorporated. You will probably have to use your hands for this. The dough will be pretty thick. NOTE: If the dough feels runny, add a bit more flour. It should be workable, yet not stiff.
Preheat oven to 350°F (175°C).
Shape loaf:
Gently deflate dough, shape into a loaf, and place in a greased 8×4-inch or 9×5-inch loaf pan.
Bake:
Bake 35–40 minutes, until crust is firm and a skewer inserted comes out clean.
Cool:
Remove from pan and cool on a wire rack before slicing.
