Colcannon (Celtic Mashed Greens and Potatoes)
A traditional Irish dish symbolizing the harvest and abundance.
Ingredients:
2 pounds potatoes, peeled and boiled
1 cup cabbage or kale, finely chopped
1/2 cup milk or cream
2 tbsp butter or olive oil
Salt and pepper to taste
Chopped green onions (optional)
Instructions:
Boil potatoes until tender.
Sauté cabbage/kale in a little butter until soft.
Mash potatoes with milk and butter, then fold in greens.
Season with salt and pepper.
Serve warm; leave a small portion outside as an offering to ancestors or spirits.
