Colcannon (Celtic Mashed Greens and Potatoes)

A traditional Irish dish symbolizing the harvest and abundance.

Ingredients:

  • 2 pounds potatoes, peeled and boiled

  • 1 cup cabbage or kale, finely chopped

  • 1/2 cup milk or cream

  • 2 tbsp butter or olive oil

  • Salt and pepper to taste

  • Chopped green onions (optional)

Instructions:

  1. Boil potatoes until tender.

  2. Sauté cabbage/kale in a little butter until soft.

  3. Mash potatoes with milk and butter, then fold in greens.

  4. Season with salt and pepper.

  5. Serve warm; leave a small portion outside as an offering to ancestors or spirits.
