Apple and Honey Oatcakes

Simple, sweet, and nourishing—a nod to the apple harvest and honey as an offering to the fae.

Ingredients:

  • 1 cup rolled oats

  • 1/2 cup whole wheat flour

  • 1 tsp baking powder

  • 1/2 tsp cinnamon

  • 1/4 tsp salt

  • 1/4 cup honey

  • 1/4 cup butter or coconut oil, melted

  • 1/4 cup milk or water

  • 1 small apple, grated

Instructions:

  1. Preheat oven to 350°F (175°C).

  2. Mix dry ingredients in a bowl.

  3. Combine wet ingredients and grated apple, then stir into dry mix.

  4. Shape into small patties on a baking sheet.

  5. Bake 12–15 minutes until golden.
